With a pinch of anxiety over the turbulent weather conditions, harvesting takes place on 29th and 30th August and, after a one-day break, the first two days of September. The limited crop yield becomes a powerful spur to action because right from the beginning the wine samples give a preview of something quite interesting. Maceration in amphorae for six months, then fining in oak wood for thirty.
