The grapes harvested on 27th and 28th September are left to macerate for seven days. The method for fining the wine enhances its quality. It’s the 30-hectolitre Slavonian oak barrel which is used for the first time in Vodopivec’s Winery. Not only does wine need the right amount of time to mature but also the right container to cradle it in. Two years and two months go by before the 2001 vintage is bottled.
